How and why to love your veggies
Growing up does not turn people into vegetable lovers. Many adults still find it impossible to eat several servings of vegetables a day.
Veggies like carrots, brussels sprouts and sweet potatoes are rich in vitamins, antioxidants and fiber. They are also low in calories and fat, besides being rich in minerals and important phytochemicals.
People have to realize how much better they would feel after a meal of salad or other healthy vegetarian diet. Such a diet will also reflect in your skin, hair and general health.
If you really have a hard time giving them their proper place in your daily meals, try the following tips.
Eat them raw Some vegetables like cauliflower, broccoli, cabbage or spinach taste much better when raw. If veggies are overcooked, they can be mushy and flavorless.
Add veggies to your favorite dishes Stir broccoli florets into macaroni and cheese. Or toss tomatoes into an omelet. Layer zucchini slices into lasagna. Add more veg toppings to your pizza. Well, plenty of ideas here to get you going.
Try them in soups or salads You can garnish your salad or soup with a variety of vegetables such as cucumber, grated carrots, zucchini, green beans, onions, radishes, tomato etc. Start with a small amount.
Small is the word: Cut them into very small pieces so their flavor and presence is less prominent and add them to sandwiches and wraps for a crunchy texture.
Drink them if you can’t eat them: Check out their juice. And you can try a whole lot of vegetables here, carrot, beetroot, spinach, tomatoes and more.
Grill the greens: You will be surprised how great grilled veggies taste. You can probably use the same marinade you're using for your meat and have fun with eggplant, carrot, bell pepper, mushrooms etc.
Have fun with them Sneak them into spaghetti or drizzle cheese sauce over broccoli or cauliflower. You will love them this way. Invent your own new ways to tingle your taste buds. You can even get your vegetables at a fast-food chain.
